Recipe of a regional dish
The gastronomy of the Landes has a wealth of authentic regional produce. Come and enjoy the local products by trying, in particular, regional dishes which guarantee local origins.
Ingredients for a regional dish:
- A few salad leaves
- A few duck gizzards
- 30g duck breast confit
- 1 tablespoon of pine kernels
- 4 white asparagus spears
- 1 tomato
- 60g duck foie gras
Place the finely-chopped salad on a plate. Add the gizzards, the diced duck breast confit and the pine kernels. Place the 4 asparagus spears in the shape of a cross on top and cut the tomato into thin slices to put around the plate. Place the slices of duck foie gras on toast in the centre of the plate. Season to your own taste and serve immediately. Enjoy your meal!
